Beef Stroganoff (Sorta)

My go to use for leftover beef roast of just about any kind is what I call Beef Stroganoff. I'm sure this recipe has nothing to do with real Beef Stroganoff but it's what my family knows of the dish as I've never looked up the recipe.
Beef Stroganoff Berggren Style
Approx. 1 lb. of roast beef sliced or cubed (Left over steak, beef roast, etc. Here I used the left over prime rib from Christmas)
Approx. 1 Tablespoon olive oil (or other mild vegetable oil)
1 Yellow Onion halved and sliced
1 Cup Sour Cream
1 Tablespoon Paprika*
1 Teaspoon caraway seeds
Water or chicken stock to thin the sauce if needed
Salt and Pepper to taste
Fresh Spinach (optional)
Pasta (We use Impastable Pasta from Thin Slim Foods)**
Sauté the onions in the oil and add the spices and toss until fragrant. Add in your cooked beef and stir well. Season to taste with salt and pepper. Stir in the sour cream and thin if necessary with the water or chicken stock. If adding spinach put the spinach in right at the end and stir to wilt. Serve immediately.
*You must recite Billy Crystal's line from When Harry Met Sally here as you add the paprika. There's too much Paprika in my Paprikash!
**This is where I usually do two pots of pasta. One keto and one for the rest of the family. For the rest of the family I usually use wide egg noodles.
