Clam Chowdah!

I'm not sure why but the start of a new year always makes me think of clam chowder. It's such a comfort food kind of dish to me (as most soups are). But this easy keto friendly version hits the spot for me and my family loved it!


Clam Chowder


2 cans of baby clams

1 tablespoon olive oil

1 onion diced

4 ribs of celery chopped

8 ounces plain cream cheese

1 cup heavy cream

4 cups chicken stock (or clam juice)

1/2 head of cauliflower chopped into bite sized pieces

Bacon bits


Sauté the onion in the oil, add in the celery when the onion starts to brown. Open the clams and pour into the pot including the juice from the can. Deglaze the pan with the clam juice.

Stir in the chicken stock, cream and cream cheese. Stir until the cream cheese is well incorporated and there are no more chunks of cheese. Sprinkle bacon bits on top and serve!
