Coleslaw

I love coleslaw and for me it's not just a summer time dish. I love it as a side with just about anything or a topping for sandwiches and fish tacos. But did you know that most commercially produced coleslaws and coleslaw dressing have sugar in them? That's part of what makes them so yummy. But! I figured out a coleslaw dressing that is totally low carb!


Coleslaw


1 cup mayonnaise (not miracle whip as this has sugar in it)

1 tablespoon apple cider vinegar

1 tablespoon monk fruit or erythritol sugar substitute (Do not use stevia, or fake sugar substitutes like sweet n low, Splenda etc.)

2 tablespoons spicy mustard

1 teaspoon lemon pepper

salt to taste


Mix all ingredients and fold into chopped slaw mixture and enjoy!

Oh, and we love to top our coleslaw with roasted peanuts. Gives a great crunch and salty lift to the dish. I don't put them in the salad as if there are leftovers the peanuts go yucky soft.
