Creamy Chicken ala Fungi (Mushrooms)

As the weather is finally turning Minnesota January cold I tend to want to make comfort food. This dish is comfort food! Creamy, savory, and tender. It doesn't look the prettiest but what it lacks in presentation it more than makes up for in taste.
Creamy Chicken ala Fungi
1 cup Chicken Broth (I used organic bone broth)
1 whole yellow or white onion chopped
4 - 6 cloves of garlic roughly chopped
1/2 cup dry white wine
1 container sliced mushrooms
1 sprig of fresh rosemary (1 teaspoon if using dry rosemary)
1 teaspoon dried rubbed sage
1 small bottle of capers, drained
1 cup of coconut flour (may need a little more)
4 skinless, boneless chicken breasts or thighs cut into strips
1/4 olive oil
Drizzle a little olive oil in a saucepan. Sauté the onions in the saucepan until starting to brown. Add in the garlic, sauté till just starting to be fragrant. Add in the mushrooms and sauté till they start to wilt and the onions caramelize. Deglaze the pan with the white wine making sure to scrape up all the yummy brown bits.
Add in the herbs, capers, and chicken stock. Simmer on medium while you prepare the chicken.
Dredge the chicken strips through the coconut flour. Heat the 1/4 cup oil in a skillet, preferably one that has a lid and can go into the oven. Fry the chicken strips in the skillet just until they brown on all sides.
Add the cream to your sauce and bring back to a simmer.
Turn the heat off to the chicken but leave them in the pan. This is an important step, you are going to pour your sauce into the skillet and if you do it while the pan is piping hot, the sauce will spatter all over your kitchen. Trust me I speak from experience. :)
Cover the skillet and put it into a 425 oven. Cook for approximately 40 minutes. After 40 minutes remove the cover and cook for another 5 - 10. This should allow the sauce to reduce a bit and thicken slightly. Pour the whole lot into a serving dish and enjoy! I would highly recommend serving with something you can sop up the sauce otherwise you and your family may be tempted to lick the plates!
