Fauxtatoes!

I don't really miss mashed potatoes but these are so good I happily make them with many of our dinners. They area also really good as leftovers and heat up well. So make extra!
Fauxtatoes
1 head of cauliflower broken into smaller pieces. Size or shape doesn't really matter as it just makes it cook faster
Water or chicken stock to cover
4 ounces (half a block) of cream cheese
Salt and pepper to taste
4 tablespoons butter
1 tablespoon MCT oil (optional)
Steam the cauliflower until quite soft.
Drain the cauliflower really well. This is an important step, if you don't drain the cauliflower well enough your fauxtatoes will be runny. They'll still taste good but won't stand up like mashed potatoes. Add drained cauliflower and the cream cheese to a large blender and blend until smooth. If you don't have a large blender you could use a large bowl and an immersion blender or hand mixer. Just get them nice and smooth.
Add in salt and pepper to taste. To serve place the 1/2 stick of butter into the top of the fauxtatoes to melt on it's own. If using MCT oil, drizzle it over the top.
