Herb Salad

I love salads. I seriously could eat a salad for every meal. I especially love that you can get really interesting lettuces etc. that come already washed and ready to mix! So much easier than washing lettuce, spinning dry and ripping it up!
I especially love to mix a wild array of things together in a salad but one of my top favorites is an herb salad. Use any of the soft herbs that you like and mix them all together. Here is my favorite along with a keto friendly dressing.
Herb Salad
1 small bag of spring greens
1 bunch of parsley chopped
1 bunch of cilantro chopped
1 bunch of mint pulled off the stems and chopped
1 - 2 sprigs of thyme (pull the leaves off of the woody stem)
1/4 cup of pine nuts
Toast the pine nuts in a dry pan till turning golden and fragrant
Mix all greens and herbs. Toss with dressing. Serve immediately
Keto Vinaigrette
1/4 cup olive oil
2 tablespoons white balsamic vinegar
2 tablespoons erythritol or monk fruit (NOT stevia)
1 sprig of fresh thyme leaves
1 teaspoon of spicy mustard
salt and pepper to taste
Mix all ingredients well until the liquid emulsifies (thickens) toss on salad. This dressing keeps very well in the fridge. It'll thicken even more in the fridge so you may have to take it out and let it warm up before using again.
