I LOVE Avocados

I seriously love avocados. Not just because they are incredibly good for you but I just think they are delicious in every way shape and form. In case you want to learn more about the health benefits of avocados here is a nice article from Healthline on them.

So the other day I had a few avocados that I needed to use up. I often make guacamole with them but I lacked the other main ingredients for guac (jalapeno and cilantro). So I wanted to come up with something new to do with the avocados. Here was my solution!


Creamy Avocado Pesto Sauce


1 Ripe Avocado

1 clove of garlic

1/2 cup pine nuts

1/2 cup fresh grated parmesan

4 - 5 leaves of fresh basil

Approx 1/4 cup olive oil


Simply pit and scoop out the avocado and put all ingredients except the olive oil in a food processor. Pulse till well mixed. Now with the processor running drizzle the olive oil into the mixture until the sauce runs smooth. You might not use all the olive oil so stop when the sauce is to the consistency you like.


I served this tossed over palm noodle pasta with cooked Italian sausage but chicken would go quite nicely as well. Such as Palmini or Festival Plant Based Pasta Alternative.
