Keto Taco Casserole

I'm not a huge fan of tacos but my family all love them. So we usually have a batch of leftover taco meat in the freezer and I decided to do something different with it this time.

Good old fashioned hot dish or casserole!


Keto Taco Casserole


1 lb. cooked taco meat

1 Yellow onion chopped

1 Red, green or yellow pepper seeded and chopped

1 - 14 oz. can of diced tomatoes

6 Eggs

3 Cups of cheese of your choice (I used Chihuahua brand quesadilla cheese)

Sour Cream

Taco sauce

Jalapeno slices (optional)


Beat your eggs and stir all ingredients together except for the cheese. Pour into a well sprayed casserole dish and top with the cheese. Cover with tin foil and bake at 375 for 40 - 45 minutes. When the dish is set up remove the tin foil and let the cheese get brown and bubbly.

Let the casserole sit a bit out of the oven to set up (it cuts easier this way).

Cut into squares and serve with a dollop of sour cream and a drizzle of taco sauce.
