Philly Cheesesteak Stuffed Peppers

We love stuffed peppers but I usually make a stuffed pepper with rice etc. So I came up with the idea of stuffing peppers with Philly cheesesteak ingredients. Super easy and very tasty!


Philly Cheesesteak Stuffed Peppers


1 tablespoon olive oil

1 large Onion sliced into strips

1 container of fresh sliced mushrooms

1 cup shredded cheese

6 slices of Havarti or swiss cheese

2 sirloin or strip steaks

6 large bell peppers

Salt & Pepper to taste



Salt and pepper your steaks and let them sit before cooking. Grill the steaks briefly just to get char on both sides. They should be quite rare. Remove from the grill and let the steaks rest.

Sauté the onion slices in the oil until they start to become translucent. Add in the mushrooms and sauté until the mushrooms soften. Deglaze the pan with a little water and cook the mushroom onion mixture until the water is gone.

Slice the tops off the peppers and remove the seed core. Throw away the stems and chop the remaining pepper tops. Add to the mushroom and onion mixture. Slice the steak into thin strips

Stir into the mushroom onion mixture the shredded cheese and stuff the peppers with the steak and the mushroom onion cheese mixture. Top with the slice of Havarti cheese and tent tin foil over the pan. Roast in a 425° oven for 30 minutes. Remove the tin foil and roast for another 10 minutes or until the cheese on top is brown and bubbly.
