Seared Ahi Tuna

Need a super fast dinner? It doesn't get much easier or faster than seared ahi tuna. Ahi tuna is sushi grade tuna and it is very important to not overcook it. You want the middle to be raw. Yes, raw.
And please don't try to make this with lower grades of tuna. Yuck. This also works great as a simple appetizer that people find very impressive!
Seared Ahi Tuna
Approximately 1 cup of Everything But the Bagel Seasoning
5 Ahi Tuna Steaks
1 - 2 Tablespoons olive oil or other light oil
Simply press the Everything But the Bagel Seasoning onto all sides of the tuna steaks, till it covers the steaks evenly.
Heat some olive oil or other light oil in a large skillet.
When the pan and oil are good and hot gently place the seasoned tuna steaks into the oil. Cook quickly and turn to sear the other side. Should take just a minute or two per side.
Remove from the pan and serve with Sriracha Mayo and perhaps a light green salad. This one here was watercress, just a few snap peas cut up and a little romaine tossed with a light vinaigrette.
