Smoked Cauliflower

This past year I treated myself to a smoker pellet grill. I LOVE IT! There are so many things I can do with it. But I recently saw this brilliant idea. Smoking a whole cauliflower. If you don't have a smoker you can get somewhat similar results by roasting the cauliflower.

Simply roast or smoke the cauliflower whole. Leave some of the stem on but remove any leaves. If smoking, smoke the cauliflower for 4 hours at 225°. You want the cauliflower to be nice and light brown and soft enough to insert a fork but not so soft as to fall apart.

If oven roasting, roast at 325° for approximately an hour until the florets are turning nice and brown and again, the cauliflower is soft but not too soft.

Slice the cauliflower and top with the following dressing.


Keto Cauliflower Topping


1/4 cup bbq sauce (make sure you chose one that is low sugar, low carb) I personally love Kristy's Mischief from Just North of Memphis.

1/4 cup mayonnaise (again, not miracle whip as that has sugar in it)


Mix well and drizzle all over the cauliflower!
