In January of 2020 my husband and I were at an all time low, or high you might say. We were FAPPY! I weighted at an all time record for me of 169! I didn't even weigh that much fully pregnant with any of my three kids! My husband? He weighed 270! I didn't even recognize either of us in photos. Not that I allowed many photos of me, I shied from the camera like a spooked horse.
One night we ran across the show Fat: A Documentary. It was playing on Netflix and so we watched it. Neither of us is a fan of dieting, and especially with fad diets. But what we heard in that documentary changed our lives.
To be completely honest, I'd never been a huge carb fan. I can take or leave bread, pasta or potatoes. I really do love rice. But I LOVE fruit and evidently, I was using a fair amount of sugar in my cooking. I have always tried to stay away from most packaged foods but even I had lessons to learn.
I love to cook, I grew up in a foodie family. My father grew up in restaurants and was trained as a baker and worked as a chef until he became a priest (Episcopalian, they can do that). My mother learned to cook from my father and is a wonderful cook. Precise (which I or my father so aren't) and great at producing beautiful dinners with flavor color and texture.
But learning to cook keto and follow a keto diet was quite a journey. There are a ton of great blogers, vlogers, and Facebook groups dedicated to this topic but my husband and a number of friends kept telling me that I needed to start a blog and Facebook group to share my journey, recipes and tips.
So, here we go!
