Bacon Roasted Cauliflower

I like cauliflower but I get kind of tired of it. My family likes cauliflower enough but they would prefer to eat it either raw or as fauxtatoes. So the other day when I forgot to pick up any other veggies the only thing I had on hand for dinner was a head of cauliflower. I had to come up with something different to do to it. So I came up with this recipe and it was a hit!
Bacon Roasted Cauliflower
1 head cauliflower
4 - 6 slices of bacon cut into small slices
1 cup freshly grated parmesan
Break up the head of cauliflower and steam lightly. Meanwhile cook your bacon in a large skillet, preferably one that can also go into the oven. Leave the bacon grease in the pan and when the bacon is crispy drain the cauliflower very well and toss into the pan with the cooked bacon and bacon grease. Top with the parmesan and put into the oven at 425° to roast until the cauliflower is starting to brown.
Remove and enjoy!!
